Maple Syrup Grades:
Pure maple syrup is graded based on its density and translucency.
The United States uses two major grades to distinguish between types of pure maple syrup: Grade A and Grade B. Grade A is further divided into three subgrades: Light Amber, Medium Amber, and Dark Amber.
Grade A Light Amber – sometimes called “fancy” maple syrup. Very light in color with a mild, delicate maple taste. Preferred for making maple confections, but generally regarded as too delicate for cooking. Generally harvested at the beginning of the mapling season.
Grade A Medium Amber – medium in color with a moderate maple flavor.
Grade A Dark Amber – the darkest of the three Grade A classifications. Robust in flavor. Generally harvested at the end of the mapling season.
Grade B – is very dark maple syrup with a strong flavor. It is generally used for cooking purposes.
